Ingredients
- 4 medium sweet potatoes
- 1 lb ground beef
- ½ onion, diced
- 1 packet taco seasoning
- ½–⅔ cup water
- 1 cup corn
- Shredded cheese, optional
- Diced tomatoes, optional
- Sour cream or guacamole, optional
Directions
- Bake the sweet potatoes. Heat oven to 400°F. Wash the sweet potatoes, poke each several times with a fork, and place on a baking sheet. Bake for 45–60 minutes, or until soft.
- Cook the taco filling. While the potatoes bake, brown the ground beef and diced onion in a skillet over medium heat. Drain excess grease if needed.
- Season it. Add the taco seasoning and water. Stir well and simmer for a few minutes until the beef is coated and the mixture has thickened slightly.
- Add the corn. Stir in the corn and cook until heated through.
- Stuff the potatoes. Carefully slice each cooked sweet potato open and fluff the inside with a fork. Spoon the taco beef mixture over each potato.
- Add your favorites! Top with shredded cheese, tomatoes, sour cream, guacamole, or whatever you have on hand.

Make it your own! Shredded chicken can be used instead of beef, and black beans are an easy way to stretch the filling even further.
