Ingredients

2–3 boneless chicken breasts
1 orange (juiced, plus a few slices)
1–2 teaspoons honey
½ lemon, juiced (optional)
1 cup rice (brown or white)
1 green bell pepper, sliced
½ onion, sliced
2 cups cabbage (or substitute green beans or corn)
1 teaspoon garlic powder
1 teaspoon paprika
Salt and black pepper, to taste
Optional: dash of hot sauce

Instructions

Cook rice according to package directions. While the rice cooks, preheat oven to 375°F. Season chicken breasts with salt, pepper, garlic powder, and paprika.

In a small bowl, mix orange juice, honey, lemon juice (if using), and a pinch of salt and pepper. Place chicken in a baking dish, pour the citrus mixture over the top, and add a few orange slices. Bake for 25–30 minutes, or until the chicken is fully cooked.

While the chicken bakes, heat a skillet over medium heat and sauté onion and bell pepper until softened. Add cabbage (or other vegetables) and cook until tender, seasoning lightly with salt and pepper. For extra flavor, add a small spoonful of the chicken’s cooking juices to the vegetables.

To serve, divide rice into bowls, top with sliced chicken and sautéed vegetables, and spoon the citrus sauce from the pan over everything. Add a dash of hot sauce if desired.
